A perfect meal when you do not want to spend too much time in the kitchen.
Preparation time is the time required only in washing , peeling and cutting the vegetables and adding the spices. Rest of the work is done by the oven.
Though it is just some veggies it tastes delicious with the right seasoning.
- Take the vegetables of your choice and cut them into 1cm long pieces.
- Add oil (just 2 tbsp), salt, pepper, red chilli powder, dhaniya (coriander) powder, jeera (cumin) powder and amchoor (dry mango) powder to these vegetables and mix well.
- Transfer to a baking dish and bake for about 35- 40 minutes at 180° C in a pre – heated oven.
I had taken potatoes, carrots and onions, as these were the only veggies I had.
You can also add capsicum, cauliflower and pumpkin. A roast of these aforementioned veggies also tastes good.
The best part is that it is a very healthy meal and perfect for those who prefer eating low calorie meals are on diet.
